Harvesting Collards
After a successful winter garden, my daughter and I harvested the last of the collards. It was time to prepare the soil and get ready to plant spring and summer veggies. Collards are so full of vitamins and fiber, a great addition to any meal. I also learned that they are delicious sauteed with a little garlic and olive oil, no need to cook them for hours in a pot of water and no need to add pork. Fresh and clean, that is how they are best!
